Ingredients

1 pound cucumbers (about 2 medium cucumbers), ends trimmed, peel left on, coarsely chopped

1/2 cup fresh lime juice (from about 1 pound limes)

1 1/4 cups packed spearmint leaves (stems removed)

1/2 cup sugar

Approximately 1 1/4 cups water

Instructions

  1. Combine cucumbers, lime juice, mint leaves, sugar, and enough water to fill 3/4 of a blender. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a bowl, pressing with a spoon or spatula to extract liquid.
  3. Fill a pitcher halfway with ice. Pour in the strained liquid and stir.
  4. Garnish with fresh mint sprigs and lime slices before serving.

Notes

  • Adjust sweetness by reducing or substituting sugar with honey, agave, or stevia.
  • Add sparkling water for a fizzy variation.
  • Blend with ice for a frozen slushy-style version.
