Ingredients

2 English cucumbers

150 g (5 oz) feta cheese

¼ cup fresh dill

2 tbsp fresh chives

Handful of fresh basil

For the Dressing:

2 tbsp olive oil

2 tbsp lemon juice

1 tsp salt

½ tsp pepper

Instructions

  1. Chop the cucumbers into bite-sized pieces and place them in a large bowl.
  2. Slice the feta cheese into cubes and add it to the cucumbers.
  3. Finely chop the fresh dill and chives, then tear the basil leaves and add them to the bowl with the cucumbers and feta.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss everything together to combine.
  6. Serve immediately, or refrigerate for 15-20 minutes to allow the flavors to meld.
