Ingredients

2 large cucumbers, thinly sliced

1 small red onion, thinly sliced

1/4 cup fresh dill, chopped

1/4 cup fresh parsley, chopped

1 cup feta cheese, crumbled

1/4 cup extra virgin olive oil

2 tablespoons lemon juice

Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the thinly sliced cucumbers, red onion, chopped dill, and parsley. Toss gently to mix.
  2. Sprinkle the crumbled feta cheese on top of the vegetable mixture. Fold it in gently to avoid breaking up the feta too much.
  3. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper until fully combined.
  4. Drizzle the dressing over the cucumber mixture and toss gently to coat all the ingredients evenly.
