Ingredients

Vegetables

  • 2 Cucumbers
  • 12 Cherry tomatoes

Spread

  • 4 oz. Cream cheese, softened
  • 1 tbsp. Mayonnaise
  • 3 tbsp. Light ranch dressing
  • 1 tbsp. Frozen or fresh dill
  • ¼ tsp. Garlic salt

Garnish

  • Black pepper, to garnish

Instructions

  1. Prepare cucumbers: Rinse, peel, and slice each cucumber into half-inch thick rounds to form the base for the bites.
  2. Scoop cucumber centers: Using a half teaspoon, carefully remove some of the cucumber insides from each slice to create space for the filling.
  3. Mix spread: In a bowl, combine the softened cream cheese, mayonnaise, and light ranch dressing. Mix thoroughly until smooth and creamy.
  4. Add seasoning: Stir in the dill and garlic salt until just combined to maintain fresh flavors in the spread.
  5. Pipe filling: Transfer the cheese mixture into a piping bag fitted with a star tip. Pipe about three-quarters of a tablespoon of the spread into each hollowed cucumber slice.
  6. Dry cucumbers if needed: If the filling struggles to adhere, lightly pat the cucumber slices dry with a paper towel to remove excess moisture before piping.
  7. Add tomato topping: Halve the cherry tomatoes and press a half into the center of each piped cucumber bite, adding a burst of color and juiciness.
  8. Garnish and serve: Lightly sprinkle black pepper over the cucumber bites. Refrigerate if preparing in advance and serve chilled for best flavor and freshness.

Notes

  • These appetizers can be made several hours ahead; keep refrigerated until serving.
  • Use fresh dill if available for a brighter herb flavor.
  • Ensure cucumbers are well dried if the filling has difficulty sticking.
  • Adjust garlic salt and black pepper according to taste preference.
  • For a dairy-free option, substitute cream cheese and mayonnaise with vegan alternatives.
