  • 2 – 19 oz. cans of cooked chickpeas, drained, rinsed, and thoroughly dried
  • 1-2 tbsp olive oil
  • ½ tsp salt

  • 3 tsp sugar or 1 tsp cinnamon
  • 2 tsp turmeric or 1 tsp ginger
  • 1 lime (juice and zest) or 2 tsp cracked black pepper

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (204°C). Line a baking sheet with sides using parchment paper or aluminum foil to prevent sticking and for easy cleanup.
  2. Prepare Chickpeas: Drain and rinse the chickpeas thoroughly. Pat them dry with paper towels or a clean dish towel, removing any skins that come off during drying. The drier the chickpeas, the crispier they will roast.
  3. Initial Roasting: Spread the chickpeas evenly in a single layer on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt. Toss gently to coat all chickpeas evenly. Roast in the oven for 30 minutes, shaking the baking sheet gently every 10 minutes to ensure even cooking and prevent burning.
  4. Add Seasoning & Finish Roasting: Remove the chickpeas from the oven and evenly coat them with your chosen seasoning blend(s). Return to the oven and roast for an additional 5 to 10 minutes or until the chickpeas are crispy and the seasonings are well adhered.
