Ingredients

Chicken

  • 8 bone-in chicken thighs
  • Nonstick cooking spray

BBQ Sauce

  • 1 ½ cups your favorite BBQ sauce, divided (I used Sweet Baby Rays)

For Serving (Optional)

  • Chopped fresh parsley

Instructions

  1. Prep Slow Cooker: Lightly grease the crockpot with nonstick cooking spray to prevent the chicken from sticking during cooking.
  2. Prep Chicken: Place the chicken thighs in the crockpot and pour ¾ cup of BBQ sauce over them. Turn the chicken to evenly coat it with the sauce.
  3. Slow Cook: Cover the crockpot and cook the chicken until tender and the internal temperature reaches 180°F using an instant-read thermometer. This takes about 4 to 5 hours on LOW or approximately 3 ½ hours on HIGH.
  4. Prep Pan and Broiler: Adjust the oven rack so it’s 6 inches from the broiler and preheat the broiler to high. Line a rimmed baking sheet with foil and place a wire rack on top. Spray the wire rack with nonstick cooking spray to prevent sticking.
  5. Broil Chicken: Transfer the cooked chicken to the prepared baking sheet and wire rack. Brush the chicken on both sides with the remaining ¾ cup of BBQ sauce. Broil the chicken for about 4-5 minutes on each side, flipping halfway through, until browned and caramelized.
  6. Serve: Garnish with chopped fresh parsley if desired and serve immediately while hot.

Notes

  • Ensure chicken reaches an internal temperature of 180°F for safe consumption and optimal tenderness.
  • Using bone-in thighs adds flavor and moisture, but you can substitute boneless if preferred; adjust cooking time accordingly.
  • Broiling at the end caramelizes the BBQ sauce for a richer taste and appealing texture.
  • Leftovers can be refrigerated for up to 3 days and reheated.
  • Choose your favorite BBQ sauce to customize the flavor profile.
