Smash Dumpling Tacos are a quick and creative twist on traditional dumplings, using savory ground pork filling pressed onto crispy tortillas. A flavorful, fun way to shake up taco night with bold Asian-inspired flavors.

Ingredients

1 pound ground pork

2 tablespoons white wine vinegar

1/2 tablespoon low sodium soy sauce

4 small green onions, very finely chopped (about 1/4 cup)

4 garlic cloves, minced (about 4 teaspoons)

2 tablespoons minced fresh ginger

1/2 teaspoon kosher salt

8 small (street taco size) flour tortillas

Thinly sliced cabbage, for topping

Shredded carrots, for topping

Chopped green onion, for topping

Cilantro, for topping

Instructions

  1. In a medium bowl, mix the ground pork with vinegar, soy sauce, green onion, garlic, ginger, and salt until just combined.
  2. Place a tortilla on a clean surface. Spoon 1/8 of the pork mixture onto the center and spread into a thin layer with a spoon or fingers. Repeat for all tortillas.
  3. Heat a nonstick or cast iron skillet over medium-high heat. Place a tortilla meat-side down into the skillet. Press the tortilla into the meat using a spatula or burger press, flattening the meat further.
  4. Cook for 2–3 minutes until meat is browned and crispy. Flip and cook the other side for 1–2 minutes until tortilla is golden and crisp.
  5. Remove from skillet and repeat with remaining tacos.
  6. Serve immediately, topped with cabbage, carrots, green onion, and cilantro. Optional: drizzle with soy sauce and chili flakes for dipping.

Notes

  • Use ground chicken or turkey as a substitute for pork if preferred.
  • To keep warm, place cooked tacos on a wire rack in a 250°F oven until ready to serve.
  • Leftover pork filling can be refrigerated for up to 1 day.
