  • Vegetable oil or peanut oil (enough for deep frying, about 1-1/2 to 2 inches deep)
  • Duck sauce (for serving)

Instructions

  1. Heat the Oil: Pour about 1-1/2 to 2 inches of vegetable or peanut oil into a deep, heavy-bottomed pot. Attach a candy thermometer to the side of the pot to monitor the temperature and heat the oil to 360°F (182°C).
  2. Prepare Wonton Strips: While the oil is heating, cut as many wonton wrappers as you wish to serve into 3/4-inch wide strips. Keep the cut wontons covered with a towel to prevent drying out.
  3. Prepare Cooling Station: Line a baking sheet or cooling rack with a double layer of paper towels to drain the strips after frying. Set this aside.
  4. Fry the Wonton Strips: When the oil reaches 360°F, carefully add a handful of wonton strips into the hot oil. They will puff up immediately. Fry for 1-2 minutes, using a spider strainer or slotted spoon to stir and ensure even browning. Once golden brown on all sides, remove the strips and drain them on the paper towel-lined baking sheet.
  5. Maintain Oil Temperature: Allow the oil temperature to return to 360°F before frying the next batch, as it typically drops about 10 degrees when the strips are added.
  6. Serve: Serve the crispy wonton strips warm with duck sauce and/or Chinese hot mustard for dipping. They also make an excellent crunchy topping for soups and salads.

Notes

  • Use a heavy-bottomed pot to maintain consistent oil temperature while frying.
  • Do not overcrowd the pot when frying to avoid lowering the oil temperature too much.
  • Peanut oil is recommended for its high smoke point and flavor, but vegetable oil works well too.
  • Wonton strips can be stored in an airtight container at room temperature for a day or two but are best enjoyed fresh.
