Ingredients

2 tablespoons olive oil

3 garlic cloves, finely grated

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/8 teaspoon cayenne (optional)

1 tablespoon finely chopped parsley, plus more for serving (optional)

1 1/2 pounds yellow baby/new potatoes, cleaned and patted dry

2 ounces grated Parmesan

Instructions

  1. Preheat the oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. In a large bowl, mix together olive oil, garlic, salt, pepper, cayenne (if using), and parsley (if using).
  3. Slice the potatoes in half and toss them in the mixture until fully coated.
  4. Add Parmesan and gently toss to coat without clumping.
  5. Arrange potatoes cut side down in a single layer on the baking sheet, sprinkling extra Parmesan on top.
  6. Roast for 25–35 minutes, rotating the pan halfway through, until fork-tender and golden brown.
  7. Remove from oven, rest for 5 minutes, then flip to reveal the crispy cheesy side.
  8. Garnish with extra parsley and serve immediately.
