Ingredients

4 white fish fillets (such as cod, haddock, or tilapia)

1 cup breadcrumbs (panko recommended for extra crunch)

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp paprika

½ tsp salt

½ tsp black pepper

2 eggs, beaten

2 tbsp olive oil (for drizzling)

2 tbsp butter

3 cloves garlic, minced

¼ cup fresh lemon juice

Zest of 1 lemon

2 tbsp fresh parsley, chopped

1 tbsp fresh dill, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  3. Dip each fish fillet into beaten eggs, then coat with breadcrumb mixture. Place fillets on prepared baking sheet.
  4. Lightly drizzle or spray olive oil over the coated fish to help crisping.
  5. Bake for 15–18 minutes, or until fish is golden and flakes easily with a fork.
  6. Meanwhile, prepare the lemon herb sauce: in a small pan, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
