  • 1 cup diced onion

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Lightly spray a 2-quart (about 11 x 7-inch or 9-inch square) baking dish with nonstick cooking spray and set it aside for later use.
  2. Cook the Beef Mixture: In a large skillet set over medium heat, add the ground beef and diced onions. Cook the mixture until the beef is no longer pink, about 6-8 minutes, stirring frequently and breaking up the meat with a wooden spoon. Drain any excess grease from the skillet. Stir in the salsa, thawed corn, drained diced tomatoes, chili powder, smoked paprika, cumin, kosher salt, and black pepper until everything is well combined.
  3. Assemble the Casserole: Transfer the cooked beef mixture into the prepared baking dish. Evenly sprinkle 1 cup of the shredded cheese over the beef mixture. Next, unroll the refrigerated crescent dough sheet; if using crescent rolls, press the perforations together to seal the dough into one sheet. Lay the dough evenly over the beef and cheese layer. Then, sprinkle the remaining ½ cup of cheese on top of the dough.
  4. Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the casserole is hot throughout and the crescent roll crust is golden brown and cooked through. Check the casserole occasionally; if the crust begins to darken too quickly before the dough is fully cooked, cover it loosely with aluminum foil to prevent burning.
