Instructions

  1. Get prepped: Dice your onion, slice the sausage, mince the garlic, open the can of diced tomatoes, and slice the green onions to prepare all your ingredients for cooking.
  2. Cook onion, garlic, and brown sausage: Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced smoked sausage and diced onion, cooking until the onion begins to soften, about 1-2 minutes. Then add the minced garlic and cook for an additional 30 seconds. Season the mixture with 1/2 teaspoon cracked pepper and 1 teaspoon salt.
  3. Add pasta, tomatoes, and stock: Stir in 8 ounces of bow tie pasta, 14 ounces of diced tomatoes, 2 cups of chicken stock, and 1/2 cup heavy cream to the skillet. Bring the mixture to a boil, then cover and reduce heat to a low simmer. Cook covered for 15 minutes or until the pasta is tender and has absorbed much of the liquid.
  4. Finish with cheese: Remove the skillet from heat and stir in 1.5 cups of grated cheddar cheese until fully melted and combined into the sauce. Replace the lid and let it sit for 5 minutes to allow the cheese to melt completely.
