Ingredients

Beans and Base

  • 3 cans (15 oz. each) black beans, drained, liquid reserved
  • 1 1/2 cups liquid from canned beans

Flavorings

  • 2 Tbsp. olive oil
  • 1/2 white onion, diced
  • 3 cloves garlic, minced

Instructions

  1. Heat Oil and Cook Onion: Heat olive oil in a deep skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes until it softens and becomes translucent.
  2. Add Garlic: Stir in minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  3. Add Beans and Liquid: Pour in the drained black beans along with 1 1/2 cups of the reserved bean liquid, combining it with the cooked onion and garlic.
  4. Simmer Beans: Bring the mixture to a simmer, then reduce the heat to low and let it cook gently for 9 to 14 minutes, allowing most of the liquid to evaporate and the flavors to meld.
  5. Mash Beans and Season: Mash the beans in the skillet using a potato masher or fork to your desired smoothness. Taste and add salt as needed to enhance the flavor.

Notes

  • You can adjust the consistency of the beans by mashing more or less, depending on your preference.
  • For extra flavor, consider adding a pinch of cumin or chili powder while simmering.
  • If you want a smoother texture, blend the beans after mashing.
  • These beans are great as a side dish, in burritos, or as a dip with chips.
