Ingredients

Base Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 8 ounces cremini or white mushrooms, sliced
  • 1/2 medium onion, chopped
  • 4 cloves garlic, minced

Seasonings and Flavorings

  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon Italian seasoning
  • 1/2 teaspoon lemon juice
  • 1/4 cup dry white wine or broth (chicken or vegetable)
  • Salt & pepper, to taste
  • 1-2 tablespoons chopped fresh parsley

Cream Base

  • 3/4 cup heavy/whipping cream

Instructions

  1. Heat the fats: Add the olive oil and butter to a skillet and warm over medium-high heat until the butter is fully melted and begins to foam.
  2. Sauté mushrooms and onions: Add the sliced mushrooms and chopped onions to the skillet. Cook, stirring occasionally, until the mushrooms release their moisture and it evaporates, and both mushrooms and onions turn golden and nicely seared, about 10 to 12 minutes.
  3. Add aromatics and seasonings: Lower the heat to medium. Stir in the minced garlic, Dijon mustard, Italian seasoning, and lemon juice. Cook this mixture for approximately 30 seconds, allowing the garlic to become fragrant.
  4. Incorporate white wine or broth: Pour in the dry white wine or broth and let it bubble for 30 seconds to 1 minute, letting the alcohol or broth reduce slightly and enhance the sauce’s depth.
  5. Finish with cream: Stir in the heavy cream and continue cooking for 3 to 5 minutes, allowing the sauce to thicken to your preferred consistency.
  6. Season and garnish: Season the sauce with salt and pepper to taste—cream sauces often require a generous amount. Finally, stir in the fresh chopped parsley and serve immediately to enjoy the sauce at its freshest.

Notes

  • For a lighter version, substitute heavy cream with half-and-half, but the sauce will be less rich.
  • If you prefer a gluten-free option, use gluten-free broth instead of white wine.
  • This sauce pairs wonderfully with grilled meats, roasted vegetables, or pasta.
  • Make sure to cook the mushrooms thoroughly to develop the best flavor.
  • Leftover sauce can be refrigerated for up to 3 days and gently reheated on the stovetop.
