Sauce

  • 1 tablespoon flour
  • 3 cloves garlic (minced)
  • 1/2 cup chicken broth or dry white wine
  • 1 cup heavy/whipping cream
  • 1/2 cup freshly grated parmesan cheese
  • 1 tablespoon fresh parsley (chopped)

Instructions

  1. Prepare the Chicken: Cut each chicken breast in half lengthwise to create four thinner pieces. Season both sides generously with salt, pepper, and garlic powder to ensure flavorful chicken.
  2. Heat the Skillet: Add olive oil and butter to a skillet and heat over medium-high for a few minutes until the butter is melted and the pan is hot.
  3. Cook the Chicken: Sear the chicken pieces in the skillet for 5-6 minutes per side until they develop a nice golden crust and are cooked through. Once done, transfer the chicken to a plate and loosely cover with foil to keep warm; turn off the heat while doing this.
  4. Make the Sauce Base: Turn the heat back on to medium-high. Add the flour and minced garlic to the hot skillet, stirring continuously for about one minute to cook off the raw flour taste and to release garlic aroma.
  5. Add Liquids: Pour in the chicken broth (or dry white wine) and whisk continuously until the flour fully dissolves and the liquid reduces by half, forming a flavorful base.
  6. Thicken the Sauce: Stir in the heavy cream and let it simmer gently for a few minutes until the sauce thickens to your liking. Be careful to reduce the heat if it starts boiling rapidly to avoid curdling. Remove the skillet from heat, then stir in the grated Parmesan cheese until melted and smooth.
  7. Combine and Finish: Return the chicken and any accumulated juices back to the skillet, spooning the creamy sauce over the top. Taste and adjust seasoning with extra salt and pepper if needed, then garnish with chopped fresh parsley before serving.
