Easy Crab and Shrimp Bisque is a velvety, creamy seafood soup made with tender crab, shrimp, and a rich tomato-cream base. Elegant enough for entertaining yet simple enough for a weeknight dinner.

Ingredients

8 oz crab meat (picked over for shells)

8 oz shrimp, peeled, deveined, and tails removed

2 tbsp olive oil

1 red bell pepper, roughly chopped

1 medium onion, roughly chopped

3 garlic cloves, minced

1 cup tomato sauce

1 tsp hot sauce (adjust to taste)

2 tsp Old Bay seasoning

2 cups half-and-half

1/4 cup Parmesan cheese, grated

2 tbsp fresh chives, chopped (for garnish)

Salt and black pepper, to taste

Instructions

  1. Prepare seafood: Pick through crab meat to remove any shells. Peel, devein, and remove tails from shrimp.
  2. In a saucepan over medium-high heat, heat olive oil. Add red pepper and onion, cooking for 5–7 minutes until softened. Add garlic and cook for 1 more minute.
  3. Stir in tomato sauce, hot sauce, Old Bay seasoning, and half-and-half until well combined. Add crab meat and shrimp. Bring mixture to a boil, then reduce to a simmer.
  4. Carefully transfer the mixture to a high-powered blender or food processor. Blend until smooth and creamy.
  5. Pour into bowls, top with Parmesan, sprinkle with chives, and season with salt and pepper to taste.
  6. Optional: Reserve a few shrimp before blending and place them on top of the bisque for garnish.

Notes

  • Add lobster or scallops for an extra-luxurious bisque.
  • Use heavy cream instead of half-and-half for a richer soup.
  • Add a splash of white wine for depth of flavor.
  • Substitute cayenne pepper for hot sauce if desired.
  • Stir in spinach or roasted corn for added texture.
  • Store in the refrigerator for up to 2 days and reheat gently on the stovetop.
  • Do not freeze as the dairy base may separate.
