Ingredients

Pasta

  • 8 ounces pasta

Sauce

  • 2 tablespoons butter
  • 1/2 tablespoon flour
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth, vegetable broth, or dry white wine
  • 1 tablespoon lemon juice
  • 1/4 teaspoon Italian seasoning
  • 3/4 cup heavy whipping cream
  • 1.5 cups corn kernels (fresh or frozen)
  • 1/2 cup freshly grated parmesan cheese
  • 1/4 cup loosely packed fresh basil, torn or chopped
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve about a tablespoon of pasta water before draining.
  2. Make the roux and sauce base: About 10 minutes before pasta is done, melt the butter in a medium skillet over medium heat. Sprinkle the flour over the melted butter and cook, stirring continuously, for 1 to 2 minutes to form a light roux.
  3. Add aromatics and liquids: Stir in the minced garlic, followed by the chicken or vegetable broth (or white wine), lemon juice, and Italian seasoning. Allow the mixture to bubble gently for about 30 seconds to meld the flavors.
  4. Incorporate cream and corn: Whisk in the heavy cream until smooth, then add the corn kernels. Let the sauce simmer for several minutes, stirring occasionally, until it thickens to your desired consistency.
  5. Finish the sauce: Remove the skillet from the heat. Stir in the freshly grated parmesan cheese and torn basil leaves until well combined.
  6. Toss pasta with sauce: Add the drained pasta to the skillet. Toss thoroughly to coat, adding reserved pasta water a little at a time if the sauce seems too thick. Season generously with salt and pepper to taste.
  7. Serve: Serve the creamy corn pasta immediately while warm for the best flavor and texture.

Notes

  • Use fresh or frozen corn as preferred; frozen corn should be thawed before adding.
  • For a vegetarian option, use vegetable broth or wine instead of chicken broth.
  • Add reserved pasta water gradually when tossing pasta with sauce if it becomes too thick; this helps loosen the sauce while maintaining creaminess.
  • You can substitute parmesan cheese with a vegetarian hard cheese if desired.
  • Fresh basil contributes bright herbal notes, so add it last to preserve its flavor and color.
