Ingredients

1 ripe lime, thoroughly washed (optionally add ½ more for stronger flavor)

4 cups water

1 can (13.66 ounces) coconut milk (full-fat or lite)

1 cup pure maple syrup

Instructions

  1. Wash lime and cut off both ends. Slice into wedges (keep peel on).
  2. In a blender, combine lime wedges, water, coconut milk, and maple syrup. Blend 30 seconds (avoid over-blending).
  3. Strain mixture through a fine mesh strainer or nut milk bag.
  4. Pour over ice and serve immediately.
  5. Alternative method: Use ½ cup fresh lime juice instead of blending whole limes. Mix with water, coconut milk, maple syrup, and optional lime zest.
