Instructions

  1. Cook Gnocchi: Boil the gnocchi according to the package instructions until they float to the top or are tender. Drain, rinse under cold water, and set aside.
  2. Cook Bacon: In a large skillet over medium heat, cook the roughly chopped bacon until crispy. Remove the bacon with a slotted spoon and drain excess fat in the pan, leaving about 2 tablespoons for flavor.
  3. Sauté Garlic: Return the skillet to the stove, melt the salted butter in the bacon fat, then sauté the finely minced garlic until fragrant, about 30 seconds, being careful not to burn it.
  4. Make Roux and Sauce Base: Whisk in the all-purpose flour and cook until the mixture turns golden. Gradually whisk in the chicken broth along with the Italian seasoning, salt, and black pepper, then let the sauce simmer until it thickens, around 5 minutes.
  5. Add Cream and Spinach: Whisk in the heavy cream and continue stirring until the sauce begins to thicken. Fold in the baby spinach and cook it down until wilted, about 3 minutes.
