Ingredients

Filling

  • 16 oz cream cheese blocks (2 blocks)
  • 2 teaspoons garlic powder
  • 2 teaspoons dried shallots
  • 8 oz sweet mini peppers, about 1 cup chopped
  • 1 1/2 teaspoons fresh dill
  • 2 tablespoons fresh chives
  • Kosher salt and black pepper to taste

Wrap

  • 6 large flour tortillas (around 12 inches each)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the cream cheese, garlic powder, dried shallots, chopped sweet mini peppers, fresh dill, and fresh chives. Mix thoroughly until all ingredients are fully combined. Taste the mixture and adjust the salt and pepper as needed, keeping in mind that the flavors will intensify after chilling.
  2. Assemble the roll ups: Spread a thin, even layer of the cream cheese mixture onto each large flour tortilla. Starting at one edge, roll the tortilla tightly into a log shape to ensure the filling stays contained.
  3. Chill the roll ups: Wrap each rolled tortilla tightly in cling wrap to seal and refrigerate for at least 1 hour, up to 1 day. This chilling step helps the flavors meld and firms up the roll, making it easier to slice.
  4. Slice and serve: Using a very sharp knife, cut the chilled tortillas into 3/4 to 1-inch thick slices to create pinwheels. Wipe the knife clean between cuts for clean edges. Serve the roll ups cold or at room temperature. The flavor improves with longer refrigeration, so feel free to prepare in advance.

Notes

  • Use large tortillas (about 12 inches) for easier rolling and better portion sizes.
  • The roll ups can be made up to 24 hours in advance to deepen the flavor.
  • If you prefer, substitute fresh shallots for dried shallots for a fresher taste.
  • For a spicier kick, add a pinch of cayenne pepper or use jalapeños instead of sweet mini peppers.
  • These pinwheels are best served chilled but can be left at room temperature for up to 2 hours before serving.
