Ingredients

Fries

  • 2 (20 oz) bags frozen waffle fries

Crab Mixture

  • 6 oz cream cheese, whipped
  • 1/4 cup mayonnaise
  • 2 teaspoons Worcestershire sauce
  • 1/2 tablespoon Old Bay seasoning
  • 1 tablespoon lemon juice
  • 1/2 pound jumbo lump or lump crab meat
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese (half of 1/2 cup)

Topping

  • 1/4 cup shredded cheddar cheese (remaining half of 1/2 cup)
  • 3 tablespoons scallions, thinly sliced

Instructions

  1. Bake Fries: Preheat your oven and bake the frozen waffle fries according to the package instructions, ensuring they become crispy and golden brown.
  2. Prepare Crab Mixture: In a large mixing bowl, combine the whipped cream cheese, mayonnaise, Worcestershire sauce, Old Bay seasoning, and lemon juice. Gently fold in the crab meat along with half of the shredded cheddar cheese and all of the mozzarella cheese, taking care not to break up the crab meat.
  3. Adjust Oven Temperature: Once the fries are done baking, reduce the oven temperature to 350°F (175°C) and line a baking sheet with parchment paper.
  4. Assemble Crab Fries: Spread the baked fries evenly on the parchment-lined baking sheet. Top the fries with the prepared crab mixture, then sprinkle the remaining cheddar cheese over the top.
  5. Bake with Crab Mixture: Bake the assembled fries for 15-20 minutes, or until the cheese is melted and the crab mixture is heated through.
  6. Optional Broil: For an extra crispy finish, broil the crab fries for 1-2 minutes, watching carefully to prevent burning, until the cheese is browned and edges crisp.
  7. Garnish and Serve: Remove the crab fries from the oven and garnish with thinly sliced scallions. Serve immediately either on the baking sheet or transfer to a serving dish.

Notes

  • Use jumbo lump or lump crab meat for the best texture and flavor.
  • For extra crispiness, avoid overcrowding fries on the baking sheet during initial bake.
  • If desired, substitute Old Bay seasoning for a seafood seasoning blend.
