Ingredients

2 large (16 oz each) wild-caught salmon fillets

8 oz jumbo lump crab

½ lb shrimp, peeled and deveined

4 oz cream cheese

2 tbsp fresh lemon juice

¼ cup parsley, chopped

2 tbsp green onions, chopped

4 garlic cloves, minced

1 tbsp Old Bay seasoning

1 tsp cardamom

1 tsp Badia complete seasoning

1 tsp adobo seasoning

1 tsp onion powder

2 tsp paprika, divided

¼ cup shredded mozzarella cheese

2 tbsp grated parmesan

Salt and pepper, to taste

2 tbsp butter (divided)

Instructions

  1. Preheat oven to 350°F (175°C). Mince garlic and chop parsley and green onions. Season shrimp with salt and pepper.
  2. In a pan over medium-high heat, melt 1 tbsp butter. Add garlic and 1 tsp paprika, cooking for 30 seconds. Add shrimp and cook about 3 minutes, until lightly browned. Remove and set aside.
  3. In a large bowl, combine cream cheese, parsley, green onions, and lemon juice. Gently mix to soften cream cheese. Add crab, shrimp, mozzarella, parmesan, and all seasonings except Old Bay. Mix gently until just combined.
  4. Season salmon fillets with salt, pepper, and Old Bay. Place one salmon fillet on a baking dish, spread stuffing evenly on top, then cover with the second fillet. Reserve some stuffing for topping later.
  5. Place 1 tbsp butter on salmon and bake for 20 minutes.
  6. Remove from oven, spread remaining stuffing on top, and broil for 5 minutes until golden.
  7. Garnish with parsley and serve with vegetables, rice, or mashed potatoes.

Notes

  • Do not overmix the stuffing to keep a chunky, luxurious texture.
  • Use wild-caught salmon for best flavor.
  • The stuffing also doubles as a delicious seafood dip if served separately.
