Cowboy Butter Chicken Linguine is a rich and creamy pasta dish featuring juicy, seasoned chicken and a bold, buttery sauce. With a kick of paprika and chili flakes, balanced by fresh lemon juice and parsley, this flavorful pasta is perfect for a satisfying weeknight meal.
2 chicken breasts, cubed
8 oz linguine pasta
1 tbsp olive oil
3 tbsp butter
2 garlic cloves, minced
1 tsp paprika
1/2 tsp chili flakes
Salt & pepper to taste
Juice of 1/2 lemon
Fresh parsley, chopped
Cook the linguine according to package directions, then drain and set aside.
In a skillet, heat olive oil over medium-high heat. Add the cubed chicken, seasoning it with salt, pepper, and paprika. Cook the chicken until it’s browned and cooked through.
Add the butter, minced garlic, and chili flakes to the skillet. Stir everything together until the butter is melted and the garlic is fragrant.
Toss the cooked pasta into the skillet. Add the lemon juice and chopped parsley. Toss everything together to coat the pasta evenly with the sauce.
Serve hot, topped with extra parsley if desired.
Variations: Add sautéed spinach, mushrooms, or bell peppers for more texture. For more heat, increase chili flakes or add cayenne pepper. Swap the chicken for shrimp or a plant-based protein for a different twist.
Storage: Leftovers can be stored in an airtight container for up to 2-3 days. Reheat in a skillet with a splash of water or chicken broth, or microwave for 1-2 minutes.
