Ingredients

2 medium/large sweet potatoes, cubed

2 tsp olive or avocado oil

1/2 tsp sea salt

1/2 tsp garlic powder

1/8 tsp black pepper

1 lb lean ground beef (90/10 preferred)

23 tbsp taco seasoning

2 tbsp water (if needed)

1 cup cottage cheese

1 avocado, chopped

4 tsp hot honey

Hot sauce (optional)

Pickled onions (optional)

Sweet and hot jalapeños (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with oil, salt, pepper, and garlic powder.
  2. Spread the sweet potatoes on a baking sheet and roast for 20 minutes, flipping halfway through.
  3. Meanwhile, heat a skillet over medium-high heat. Add ground beef, breaking it apart with a spatula, and cook until browned, about 6–7 minutes. Stir in taco seasoning and water if needed.
  4. Divide roasted sweet potatoes between four bowls. Top with cooked beef, then spoon cottage cheese over each bowl.
  5. Add chopped avocado, a drizzle of hot honey, hot sauce, and optional toppings like pickled onions and jalapeños. Serve immediately.
