Ingredients

Main Ingredients

  • 2 1/4 cups frozen mixed berries + frozen cherries (approximately 1 1/4 cups mixed berries and 1 cup cherries)
  • 1 cup cottage cheese
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 tablespoons honey or maple syrup (optional, for sweetness)

For Topping (Optional)

  • 1 oz freeze dried strawberries

Instructions

  1. Prepare the Base: In a blender, add the frozen mixed berries and frozen cherries first, then add the cottage cheese, honey or maple syrup if using, milk, and vanilla extract. Blend everything together until the mixture is smooth and creamy.
  2. Fill Popsicle Molds: Pour the blended mixture into popsicle molds. Insert popsicle sticks into the center of each mold. Carefully wipe off any excess mixture around the edges to ensure the popsicles will release easily after freezing. Cover with the popsicle mold covers and place them in the freezer for at least 12 hours or overnight to fully freeze.
  3. Prepare the Freeze-Dried Strawberry Topping: If using freeze dried strawberries, place them in a sealable plastic bag. Use a mallet or your hands to crush them into fine pieces. Spread the crushed freeze dried strawberries on a plate or sheet pan and set aside.
  4. Dip Popsicles in Topping: Once the popsicles are fully frozen, carefully remove them from the molds. Lightly brush the tops of the popsicles with a little honey to help the crushed freeze dried strawberries stick better. Dip the top portion of each popsicle into the crushed strawberries to coat. Return popsicles briefly to the freezer if needed.
