Ingredients

2 cups cottage cheese (drained)

1 1/2 cups rolled oats

4 eggs

2 tbsp olive oil

1 tbsp baking powder

1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper.
  2. Strain cottage cheese to remove excess liquid and discard the liquid.
  3. Add cottage cheese, oats, eggs, olive oil, baking powder, and salt to a blender or food processor. Pulse until mostly smooth.
  4. Pour the batter into the prepared loaf pan and bake for 35–40 minutes, covering loosely with foil in the last 15 minutes if browning too quickly.
  5. Let cool in the pan for 5 minutes, then transfer to a wire rack and cool for at least 10 minutes before slicing.

Notes

  • Store in an airtight container at room temperature or refrigerate for up to 5 days.
  • Can be made without a blender—just mix ingredients in a bowl, though texture may be lumpier.
  • Substitute oats with 1 cup + 3 tbsp almond flour or all-purpose flour if preferred.
  • Great topped with butter, honey, or cinnamon.
