Ingredients

Dough

  • 240g (1 cup) whole milk
  • 2 ¼ teaspoons instant or active dry yeast
  • 50g (¼ cup) granulated sugar
  • 530g (4 ¼ cups) all-purpose flour, plus more for dusting
  • 2 large eggs
  • 1 teaspoon salt
  • 85g (6 tablespoons) butter, softened to room temperature

Filling

  • 55g (4 tablespoons) softened butter
  • 100g (½ cup) soft brown sugar
  • 1 ½ teaspoons cinnamon
  • 2 teaspoons instant coffee powder

Coffee Cream Cheese Frosting

  • 30g (2 tablespoons) milk
  • ½ tablespoon instant coffee powder
  • 113g (4 oz) cream cheese, room temperature
  • 30g (2 tablespoons) butter, softened to room temperature
  • 180g (1 ½ cups) confectioners sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Activate Yeast: Warm the milk in a small saucepan to 95-104°F (35-40°C) and pour into the bowl of a stand mixer. Sprinkle yeast and sugar over the warm milk. If using active dry yeast, let it sit for 5-10 minutes until foamy; instant yeast can be added directly.
  2. Mix Dough: Add flour, salt, and eggs to the milk mixture. Attach the dough hook to the mixer and mix until a thick dough forms.
  3. Knead Dough: Gradually add the softened butter in cubes, mixing on medium speed for about 10 minutes until the dough is soft, elastic, and passes the windowpane test.
  4. First Rise: Shape dough into a ball and place in a large, lightly greased bowl. Cover with plastic wrap or a damp towel and let rise in a warm place until doubled, about 1 to 1 ½ hours. Alternatively, refrigerate covered for up to 16 hours.
  5. Prepare Filling: In a medium bowl, beat softened butter, brown sugar, instant coffee powder, and cinnamon with an electric mixer until creamy and well combined.
  6. Shape Rolls: Punch down the dough and turn it onto a floured surface. Roll into a 12×16 inch (30×40 cm) rectangle. Spread the coffee cinnamon filling evenly over the surface.
  7. Roll and Cut: Roll the dough tightly from the long side into a jelly-roll shape. Use unflavored dental floss or a serrated knife to cut into 12 equal pieces.
  8. Second Rise: Place rolls into a greased or parchment-lined 9×13 inch baking dish. Cover and let rise in a warm place until doubled in size.
  9. Preheat Oven: Heat oven to 350°F (180°C).
  10. Bake Rolls: Bake rolls for 25-28 minutes until golden brown, covering loosely with foil if browning too quickly.
  11. Prepare Coffee Mixture for Frosting: Dissolve ½ tablespoon instant coffee powder in 30g (2 tablespoons) milk, warming briefly in microwave if needed. Let cool.
  12. Make Frosting: Beat cream cheese and softened butter in a bowl on high speed until smooth. Add confectioners sugar, vanilla extract, and cooled coffee milk mixture. Beat on low to incorporate, then high until creamy.
  13. Cool and Frost: Let baked rolls cool for 20 minutes, then spread the coffee cream cheese frosting evenly over the top.
  14. Storage: Store leftover rolls at room temperature in an airtight container for up to 3 days or freeze for up to 3 months. Thaw overnight in the refrigerator and warm before serving.

Notes

  • Use instant yeast for a faster process; active dry yeast requires proofing.
  • The dough can be refrigerated after the first rise to develop flavor and make baking day easier.
  • Unflavored dental floss helps achieve clean, even roll slices without squashing.
  • If rolls brown too quickly during baking, cover loosely with foil to prevent burning.
  • The coffee cream cheese frosting adds a unique flavor and can be adjusted by varying coffee strength.
  • Ensure the milk used for yeast activation is not too hot to prevent killing the yeast.
  • Store rolls properly to maintain softness; freezing is ideal for longer storage.
