Ingredients

2 large eggs, lightly beaten

1 cup vegetable oil

1¼ cups milk

1 tablespoon vanilla extract

3 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

½ teaspoon salt

1¼ cups packed light brown sugar

1 tablespoon ground cinnamon

¼ cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish and set aside.
  2. In a large mixing bowl, whisk together eggs, vegetable oil, milk, and vanilla extract.
  3. In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  4. Add the dry ingredients to the wet mixture and mix until well combined.
  5. Pour half the batter into the prepared baking dish.
  6. In another bowl, mix the brown sugar and cinnamon to create the streusel mixture.
  7. Sprinkle half of the cinnamon sugar over the first layer of batter. Carefully pour the remaining batter on top, spreading it evenly.
  8. Sprinkle the rest of the cinnamon sugar mixture over the top of the batter.
  9. Drizzle melted butter evenly over the top layer as desired.
  10. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Serve warm.

  • Use dollops of batter and gently spread with a spatula to evenly layer over the cinnamon sugar.
  • Try adding 1½ cups of fruit like blueberries or chopped apples for variation; increase bake time by 5–10 minutes if needed.
  • Store at room temperature for 2–3 days, in the fridge up to a week, or freeze for up to 3 months.
  • Reheat in microwave for 10 seconds or in the oven wrapped in foil at 350°F for 6–8 minutes.
