Ingredients

Smoothie Ingredients

  • 1 large frozen ripe banana, sliced
  • Zest from 1 small lime or key lime
  • 2 tablespoons fresh lime or key lime juice
  • ½ cup vanilla or coconut Greek yogurt (use coconut-based yogurt to keep it dairy free)
  • ½ cup light coconut milk (or milk of choice)
  • ½ cup fresh spinach
  • ½ teaspoon vanilla extract
  • Optional: 1-2 teaspoons maple syrup or honey to sweeten if necessary

For Serving

  • Extra lime wedge, for rimming glass
  • Graham cracker crumbs
  • Whipped cream
  • Shredded toasted coconut

Instructions

  1. Prepare the Glass: Add crushed graham crackers to a small plate. Use a lime wedge to moisten the rim of your serving glass, then dip and roll it in the graham cracker crumbs until fully coated, creating a flavorful rim.
  2. Blend Ingredients: Place the frozen banana, lime zest, lime juice, vanilla or coconut Greek yogurt, light coconut milk, fresh spinach, and vanilla extract into a high-powered blender. Blend until smooth, adding more coconut milk if needed to achieve your desired consistency.
  3. Taste and Sweeten: Taste your smoothie and add 1-2 teaspoons of maple syrup or honey if additional sweetness is desired. Vanilla yogurt often provides enough sweetness on its own.
  4. Serve: Pour the smoothie into the prepared glass. Top with a generous swirl of whipped cream and sprinkle shredded toasted coconut on top. Garnish with an extra lime wedge if desired. Serve immediately.

Notes

  • Siggi’s Key Lime yogurt is a fantastic choice if you can find it for an authentic taste.
  • To keep this smoothie vegan or dairy-free, opt for coconut-based or other plant-based vanilla yogurt alternatives.
  • You can increase the spinach up to 2 cups for more nutrients without affecting the flavor much.
  • Add a scoop of vanilla protein powder for an added protein boost, which also enhances the smoothie’s flavor.
