Ingredients

Ingredients

  • 1 ¾ cups (200g) sweetened coconut flakes
  • 1/3 cup (100g) dulce de leche
  • 1/3 cup (50g) coarsely chopped macadamia nuts

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (177°C). Lightly spray a mini muffin pan with cooking spray or alternatively line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  2. Mix Ingredients: In a large bowl, thoroughly mix together the sweetened coconut flakes, dulce de leche, and coarsely chopped macadamia nuts until well combined. The mixture may feel dry at first, but working the dulce de leche into the coconut flakes will help bind everything together.
  3. Shape Candies: Divide the mixture evenly into 24 mini muffin cups, packing the mixture down tightly for best shape. If using a baking sheet, use a small cookie scoop to form balls and place them on the prepared surface. Packing the scoop tightly will make shaping much easier.
  4. Bake: Bake the cocadas in the preheated oven for 10 to 13 minutes, or until the edges are beautifully browned and caramelized.
  5. Cool & Serve: Allow the cocadas to cool completely in the pan or baking sheet before carefully transferring them onto a serving platter to avoid breaking.

Notes

  • The mixture can be slightly dry before baking; ensure to work the dulce de leche thoroughly into the coconut for cohesion.
  • If mini muffin tins are not available, forming small balls with a cookie scoop on a baking sheet works well.
  • Cooling completely is essential to help cocadas set properly and maintain their shape.
