Ingredients

2 tbsp olive oil

1 onion, diced

2 celery stalks, diced

2 carrots, diced

3 garlic cloves, minced

6 cups low-sodium vegetable broth

1 1/2 cups dried brown lentils, rinsed

1 tsp dried rosemary (or 1 tbsp fresh)

1 tsp dried thyme leaves (or 1 tbsp fresh)

1/2 tsp black pepper

1 bay leaf

1 (14.5 oz) can diced tomatoes

1 tbsp red wine vinegar

Salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and carrots. Sauté for about 5 minutes until softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in broth, lentils, rosemary, thyme, black pepper, and bay leaf. Bring to a boil.
  5. Reduce heat to low and simmer for 25 minutes, stirring occasionally.
  6. Add diced tomatoes and simmer for another 5–10 minutes until lentils are tender.
  7. Remove from heat, discard bay leaf, and stir in red wine vinegar.
  8. Season with salt to taste and serve warm.

Notes

  • Stir in spinach or kale during the last few minutes of cooking for added greens.
  • Blend part of the soup for a creamier consistency.
  • Use green or red lentils as substitutes but adjust cook time.
  • Add chickpeas, potatoes, or pasta for variation.
  • Soup thickens over time—add water or broth when reheating if needed.
