Slaw

  • 1 (14-ounce) bag cole slaw mix (about 7-8 cups)

Instructions

  1. Prepare the Dressing: Combine the Greek yogurt, cilantro, lime juice, ground cumin, sea salt, black pepper, green onions, garlic, and jalapeño (if using) in a blender or food processor. Pulse briefly a few times until the mixture is well combined and smooth.
  2. Mix the Slaw: Place the cole slaw mix into a large mixing bowl. Drizzle the prepared cilantro lime dressing over the slaw. Toss thoroughly until the slaw is evenly coated with the dressing. Taste and adjust seasoning with extra pepper or lime juice as needed.
