Ingredients

Base and Toffee

  • 40 Club crackers
  • ¾ cup (170g) unsalted butter, cut into large pieces
  • ¾ cup (177g) light brown sugar, packed

Topping

  • Two 10 oz bags of Ghirardelli white melting wafers
  • ¼ cup (54g) granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 400°F (204°C). Line a 10x15x1 inch baking sheet with parchment paper, then arrange 40 club crackers in a single layer to completely cover the bottom of the pan.
  2. Make Toffee Mixture: In a small saucepan, combine the unsalted butter, light brown sugar, and a couple pinches of salt. Melt the butter over medium heat while stirring occasionally. Once melted, bring the mixture to a simmer with bubbles all over, and continue to simmer for 3 minutes, whisking occasionally to ensure the butter and sugar are fully combined and smooth.
  3. Pour Toffee Over Crackers: Immediately after simmering, pour the hot toffee mixture evenly over the crackers. Use an offset spatula to spread the toffee into an even layer that covers all crackers. Place the baking sheet in the preheated oven for 5 minutes to allow the toffee to set.
  4. Cool and Add Toppings: Remove the baking sheet from the oven and place it on a cooling rack for 5 minutes to cool slightly. While cooling, melt the Ghirardelli white chocolate wafers according to package directions, typically in a microwave-safe bowl using short bursts of melting time, stirring between.
  5. Apply White Chocolate and Cinnamon Sugar: After the toffee has cooled for 5 minutes, pour the melted white chocolate over the toffee layer. Spread it evenly using a spatula. In a small bowl, combine the granulated sugar and ground cinnamon, then immediately sprinkle this cinnamon sugar mixture evenly over the warm white chocolate layer.
  6. Chill and Serve: Let the entire toffee cool completely at room temperature, or speed up the process by placing the pan in the refrigerator until firm. Once chilled, break the churro toffee into irregular pieces and serve.

Notes

  • Use white melting wafers like Ghirardelli for easy melting and smooth texture. Alternatively, high-quality white chocolate chips can be used.
  • For an extra kick, add a pinch of cayenne pepper to the toffee mixture to contrast the sweetness.
  • Store leftover churro toffee in an airtight container at room temperature or in the refrigerator to maintain crispness.
  • Be careful pouring hot toffee over crackers to avoid burns.
  • The recipe yields approximately 40 pieces, perfect for parties or gifting.
