Ingredients

Cookie Dough

  • 1 ½ cups (333g) salted butter, softened
  • 1 ½ cups (345g) granulated sugar
  • 3 eggs
  • 1 ½ tsp cake batter flavoring
  • pink food coloring, a few drops
  • 4 ½ cups (684g) all-purpose flour
  • 3 tsp baking powder

Frosting

  • 1/4 cup (56g) butter, softened
  • 8 oz cream cheese, room temperature
  • 2 tsp vanilla extract
  • 4 cups (428g) powdered sugar
  • 1 pinch salt
  • milk or heavy cream, as needed to thin frosting
  • Christmas sprinkles, for topping

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) to prepare it for baking the cookies.
  2. Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar using a stand mixer or hand mixer for about 2 minutes until the mixture is light and fluffy.
  3. Add Eggs and Flavoring: Beat in the eggs one at a time, followed by the cake batter flavoring and a few drops of pink food coloring until evenly combined.
  4. Mix Dry Ingredients: Gradually add the all-purpose flour and baking powder to the wet ingredients and mix thoroughly to form the cookie dough.
  5. Portion Dough: Divide the dough into 3 tablespoon portions. Roll each portion into a ball and then flatten slightly. Arrange these on a parchment or silicone-lined baking sheet.
  6. Bake Cookies: Bake the cookies for 9-11 minutes, or until the centers puff up and lose their glossy appearance. Remove from the oven and let them cool slightly.
  7. Prepare Frosting: While the cookies cool, whip together the softened butter, cream cheese, and vanilla extract in a bowl until smooth and creamy.
  8. Add Powdered Sugar and Thin: Add the powdered sugar one cup at a time while mixing until fully incorporated. Add a pinch of salt, then slowly add milk or heavy cream, a few teaspoons at a time, to reach your desired frosting consistency.
  9. Decorate Cookies: Transfer the frosting to a piping bag fitted with a round tip. Pipe a spiral of frosting on each still-warm cookie, starting from the center and working outward. Immediately top with Christmas sprinkles for a festive finish.

Notes

  • For best results, use room temperature ingredients to ensure easy mixing and smooth frosting.
  • If you prefer a less sweet frosting, reduce the powdered sugar slightly.
  • Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
  • The pink food coloring amount can be adjusted to achieve your preferred shade of pink.
  • Ensure the cookies have cooled slightly before frosting so the frosting doesn’t melt completely but is still soft enough to spread easily.
