Ingredients

1 1/2 cups chopped strawberries

1 cup plain Greek yogurt

1 tbsp honey

1 tsp vanilla extract

1 cup semi-sweet chocolate chips

2 tbsp coconut oil

Instructions

  1. In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Stir until everything is well-mixed.
  2. Scoop about 2 tablespoons of the yogurt mixture onto a parchment paper-lined baking sheet or large plate, forming small clusters. You should be able to make 10 clusters.
  3. Place the baking sheet in the freezer and freeze the yogurt clusters for 1-2 hours until completely frozen and solid.
  4. Once the clusters are frozen, melt the chocolate. Place the chocolate chips and coconut oil in a microwave-safe bowl, then microwave in 15 or 30-second intervals, stirring in between, until the chocolate is smooth and fully melted.
  5. Carefully dip each frozen yogurt cluster into the melted chocolate using a spoon, ensuring it is thoroughly coated. Return each cluster to the prepared baking sheet.
  6. Optional: Sprinkle a pinch of sea salt on top of each cluster for a savory touch.
  7. Return the clusters to the freezer for a few minutes to allow the chocolate to harden and the yogurt to solidify. Enjoy!

Notes

  • Store in an airtight container in the freezer for up to 1 month.
  • Let clusters thaw for a few minutes before eating for a softer texture, if desired.
  • Substitute dark chocolate for semi-sweet chocolate for a richer flavor.
  • You can use other fruits like raspberries, blueberries, or bananas in place of strawberries.
  • For a healthier version, try sugar-free chocolate chips or substitute maple syrup or stevia for honey.
  • Add toppings such as shredded coconut, crushed nuts, or extra honey for additional flavor.
  • If you prefer a lighter snack, you can skip the chocolate coating altogether.
