Ingredients

Fruit Mixture

  • 1 heaping cup raspberries (6 ounces / 170g)
  • 1 tablespoon chia seeds

Chocolate Coating

  • 5 ounces dark chocolate (or preferred chocolate)
  • 1 teaspoon coconut oil
  • Pinch sea salt (plus flaky sea salt for sprinkling)

Instructions

  1. Prepare the baking sheet: Line a quarter sheet pan with parchment paper and set it aside to keep the workspace ready for the raspberry bites.
  2. Mash raspberries: In a small bowl, use the back of a fork to mash the raspberries until they are broken down into a pulpy consistency.
  3. Add chia seeds: Stir in the chia seeds thoroughly to combine with the mashed raspberries. Let the mixture sit on the counter for 5-10 minutes to thicken as the chia seeds absorb moisture.
  4. Form bites and freeze: Scoop about 1 tablespoon-sized portions of the raspberry-chia mixture and place them onto the prepared baking sheet. Aim for 8-10 pieces depending on size. Freeze these until solid, about 1 hour.
  5. Melt chocolate: Place the chocolate in a small microwave-safe bowl and melt in the microwave in 30-60 second intervals, stirring after the first 30 seconds carefully to avoid burning. Stir in the coconut oil until the chocolate is smooth and glossy.
  6. Dip raspberry bites: Remove the frozen raspberry bites from the freezer and dip each bite thoroughly into the melted chocolate to coat. Place them back on the parchment-lined baking sheet.
  7. Add sea salt topping: While the chocolate is still wet, sprinkle a small amount of flaky sea salt over each dipped bite to enhance the flavor.
  8. Freeze to set: Return the chocolate-coated raspberry bites to the freezer for another hour or until the chocolate hardens completely.
  9. Serve and store: Enjoy immediately or transfer into an airtight container and store in the freezer for up to 3 months. Let soften on the counter for 1-2 minutes before eating.

Notes

  • Once frozen, transfer into an airtight container and store in the freezer for up to 3 months to maintain freshness.
  • When ready to eat, allow the frozen raspberry bites to soften on the counter for 1-2 minutes for the best texture and flavor.
  • The recipe can be customized by using different types of chocolate according to preference.
  • Use parchment paper to prevent sticking and allow easy removal of the bites after freezing.
