Ingredients

2 cups almond flour (192g)

¼ teaspoon baking soda (1g)

½ teaspoon salt (3g)

¼ cup + 1 tablespoon maple syrup (90g)

¼ cup extra virgin olive oil (60g)

1 teaspoon pure vanilla extract (5g)

⅓ cup dark chocolate chips (85g)

Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a skillet with a bit of coconut oil.
  2. In a large bowl, mix together almond flour, baking soda, salt, maple syrup, olive oil, and vanilla extract until well combined.
  3. Gently fold in the chocolate chips and let the dough sit for about 5 minutes to allow the ingredients to combine properly.
  4. Spoon the dough into the prepared skillet and spread it out evenly. Press down gently to ensure it’s evenly distributed.
  5. Place the skillet in the preheated oven and bake for 15-20 minutes, or until the edges are golden brown and the center is firm.
  6. Let the skillet cookie cool in the pan for a few minutes. It will firm up as it cools. For an extra indulgent treat, add a scoop of ice cream, slice, and serve warm. Enjoy!
