Ingredients

For the Paan Mixture

  • 4 betel leaves
  • 1 tsp fennel seeds
  • 1/4 tsp cardamom powder
  • 1 tbsp desiccated coconut
  • 1 tbsp sugar
  • 2 tbsp gulkand (rose petal preserve)
  • 1-2 tbsp paan mukhwaas (optional)
  • Ice cubes as needed
  • 1-2 drops green food color (optional)

For the Paan Shots

  • 2 tbsp prepared paan mixture
  • 2 scoops vanilla ice cream
  • 1 cup milk, chilled
  • 2 tsp sugar (adjust to taste)

Instructions

  1. Prepare the Paan Leaves: Wash the fresh betel leaves thoroughly to remove any dirt. Trim off the hard stems at the base and roughly chop the leaves to prepare them for blending.
  2. Blend the Base Ingredients: Transfer the chopped betel leaves to a blender. Add fennel seeds, cardamom powder, desiccated coconut, optional paan mukhwaas, and a few ice cubes to the blender jar.
  3. Initial Blending: Blend these ingredients until smooth to create a flavorful, green base that encapsulates the traditional paan aroma.
  4. Add Sweeteners and Color: Add gulkand, sugar, and a couple of drops of green food color to the blender. Toss in a few more ice cubes to chill the mixture further.
  5. Final Blend and Storage: Blend again until everything is fully combined into a smooth, creamy mixture. Transfer this paan mixture into an airtight jar and refrigerate. It remains fresh for 2 to 3 days and serves as a ready-to-use base for various paan-flavored desserts and drinks.
  6. Prepare the Paan Shots: In the blender jar, combine 2 tablespoons of the prepared paan mixture with chilled milk, vanilla ice cream scoops, and sugar to taste.
  7. Blend the Paan Shots: Blend these ingredients until smooth and creamy. Optionally strain through a sieve for an extra silky texture, or keep unstrained for a richer and authentic paan flavor.
  8. Serve: Pour into small glasses and serve chilled for a refreshing and exotic dessert experience.

Notes

  • Fresh betel leaves are key for authentic flavor; ensure they are thoroughly cleaned.
  • Adjust sugar amount based on your sweetness preference and the sweetness of gulkand.
  • Paan mukhwaas is optional but adds an authentic mouth-freshening aroma to the mixture.
  • The green food color is optional and purely for aesthetic appeal to enhance the traditional look.
  • The paan mixture can be stored in the refrigerator for up to 3 days in an airtight container.
  • For a vegan version, substitute vanilla ice cream and milk with plant-based alternatives.
  • Straining the final blend provides a smoother texture but may reduce some of the natural fibrous elements.
