Ingredients

1 can (15 oz) chickpeas, drained and rinsed

3 ripe peaches, sliced or diced

1/4 red onion, thinly sliced

1 cucumber, diced

1/4 cup fresh mint leaves, chopped

1/2 cup feta cheese, crumbled

3 tbsp fresh lime juice

1 tbsp honey (or maple syrup for vegan option)

3 tbsp olive oil

1 tsp Dijon mustard

Salt and black pepper, to taste

Instructions

  1. In a small bowl or jar, whisk together lime juice, honey, olive oil, and Dijon mustard. Season with salt and black pepper to taste.
  2. In a large mixing bowl, combine chickpeas, peaches, red onion, cucumber, and mint.
  3. Add crumbled feta, if desired.
  4. Pour the honey-lime dressing over the salad and toss gently until everything is evenly coated.
  5. Chill in the refrigerator for at least 15 minutes before serving for the best flavor.
