Ingredients

500 grams (about 1 pound) ground chicken

1 medium onion, finely chopped

3 cloves garlic, minced

¼ cup fresh parsley, finely chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons olive oil (for grilling)

Instructions

  1. In a large mixing bowl, combine the ground chicken, chopped onion, minced garlic, and fresh parsley.
  2. Stir in the ground cumin, ground coriander, salt, and black pepper. Mix until well combined.
  3. Wet your hands to prevent sticking, then shape the chicken mixture into elongated oval kofta (about 2-3 inches long).
  4. Preheat your grill or grill pan over medium-high heat. Brush the grill with olive oil to prevent sticking.
  5. Place the kofta on the grill and cook for 5-7 minutes on each side, or until golden brown and fully cooked through. Check that the internal temperature reaches 75°C (165°F).
  6. While grilling the kofta, mix the yogurt, lemon juice, and a pinch of salt in a small bowl to create the garlic yogurt sauce. Stir until smooth.
  7. Serve the grilled kofta with garlic yogurt sauce on the side and garnish with fresh parsley. Pair with your favorite sides, such as grilled vegetables or a fresh salad.

  • For a different twist, substitute ground chicken with ground lamb or turkey.
