Ingredients

1/2 cup butter

4 cups rotisserie chicken meat, shredded

1 (15 ounce) bag frozen mixed vegetables

1 (11.36 ounce) package Cheddar Bay biscuit mix (such as Red Lobster Cheddar Bay Biscuit Mix)

2 cups milk

1 (10.5 ounce) can cream of chicken soup

2 cups chicken stock

2 tablespoons fresh chopped parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Place butter in a 9×13-inch baking dish and place in the oven to melt.
  2. Once the butter is melted, add shredded chicken in an even layer over the butter. Top with frozen mixed vegetables.
  3. In a bowl, mix together the biscuit mix, included seasoning packet, and milk until blended. Pour this mixture evenly over the chicken and vegetables without stirring.
  4. In another bowl, whisk together the cream of chicken soup and chicken stock until smooth. Gently pour over the biscuit layer without stirring.
  5. Bake uncovered for 45 minutes, or until the top is golden brown and the center is just set.
  6. Remove from oven and let rest for 10 minutes. Sprinkle with fresh chopped parsley if desired before serving.
