Ingredients

1 pound ground chicken

1 cup croutons (about ½ cup once ground)

5 tablespoons Caesar dressing, divided, plus more for serving

1 garlic clove, finely minced

¼ teaspoon salt

¼ teaspoon black pepper

¾ cup freshly grated Parmesan cheese, divided

1 tablespoon avocado oil

3 cups thinly sliced romaine lettuce

4 toasted hamburger buns

Lemon juice from 1 lemon (optional)

Instructions

  1. Place the croutons in a food processor and pulse a few times, then blend for 20-30 seconds until they form a coarse crumb.
  2. In a large bowl, combine the ground chicken, ⅓ cup of the croutons (reserve the rest for the romaine slaw), 2 tablespoons of Caesar dressing, 2 tablespoons of Parmesan, garlic, salt, and pepper. Mix until just combined. Divide the mixture into 4 portions and shape into patties, about 4 inches wide and 1 inch thick.
  3. Pour the remaining Parmesan cheese into a shallow bowl or plate. Press both sides of each patty into the Parmesan to form a crust.
  4. Heat the avocado oil in a large skillet over medium heat. Add the patties and cook for 5-6 minutes per side, or until golden brown and cooked through, with an internal temperature of 165°F.
  5. In a medium bowl, toss the romaine lettuce with the remaining 3 tablespoons of Caesar dressing, 2 tablespoons of Parmesan, and the reserved ground croutons.
  6. Place each cooked patty on a toasted hamburger bun. Top with a generous scoop of the dressed romaine, a squeeze of lemon juice, and more Caesar dressing, if desired.
