Ingredients

Cherry Syrup:

4 cups pitted and halved fresh red cherries (about 22 oz)

1/3 cup water

1/2 cup granulated sugar

2 tsp lemon juice

24 tbsp Amaretto liqueur

Mascarpone Filling:

1 1/2 cups heavy cream

16 oz mascarpone cheese

3/4 cup granulated sugar

2/3 cup cherry syrup (from recipe above)

1 tsp vanilla extract

1 tsp almond extract

For Assembly:

1 (7 oz) package Savoiardi ladyfingers (about 24)

Instructions

  1. Make the Cherry Syrup: In a saucepan, combine cherries and water over medium-high heat. Mash lightly and simmer 2 minutes. Strain through a fine sieve, pressing out juice. Return juice to pan, add sugar and lemon juice, and simmer 2 minutes. Chill completely.
  2. Make the Filling: Whip heavy cream until stiff peaks form. In another bowl, beat mascarpone, sugar, 2/3 cup cherry syrup, vanilla, and almond extract until smooth. Fold in whipped cream gently.
  3. Assemble: Stir Amaretto into remaining cherry syrup. Dip ladyfingers quickly in syrup (do not oversoak) and arrange in a single layer in an 8-inch square dish. Spread half the mascarpone mixture on top. Repeat with another dipped layer of ladyfingers and the remaining mascarpone mixture. Pipe or smooth the top decoratively.
  4. Chill: Cover and refrigerate at least 6 hours, preferably overnight.

Notes

  • Do not oversoak ladyfingers, or they will fall apart.
  • Best served after chilling overnight for maximum flavor and set texture.
  • For garnish, add shaved dark chocolate, cocoa powder, or fresh cherries on top before serving.
  • Non-alcoholic version: omit Amaretto and use extra cherry syrup.
