Ingredients

1 pound lean ground beef

46 medium Russet potatoes, peeled and diced

1 packet (1 ounce) taco seasoning

1/2 cup water

1 cup shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Sour cream

Diced tomatoes

Green onions

Chopped cilantro

Jalapeño slices

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a large baking dish.
  2. Toss the diced potatoes with olive oil, garlic powder, onion powder, salt, and pepper in a large bowl. Spread the potatoes evenly on a baking sheet and roast for 20-25 minutes until golden and fork-tender.
  3. While the potatoes are baking, heat a skillet over medium-high heat. Add the ground beef and cook, breaking it up until no longer pink, about 5-7 minutes. Drain any excess fat.
  4. Sprinkle the taco seasoning over the cooked beef, add the water, and stir well. Let the mixture simmer for 2-3 minutes until thickened.
  5. Once the potatoes are done, transfer them to a greased baking dish. Spoon the seasoned taco beef evenly over the roasted potatoes.
  6. Sprinkle the shredded cheddar cheese on top of the beef and potatoes, then return the dish to the oven and bake for 8-10 minutes until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool for a few minutes. Top with your favorite toppings like sour cream, diced tomatoes, green onions, cilantro, or jalapeños before serving.
