Ingredients

Potato Mixture

  • 2 lb russet potatoes
  • 5 tbsp glutinous rice flour
  • 1 tsp salt (add gradually to taste)
  • ½ tsp black pepper (add gradually to taste)

Stuffing and Coating

  • 1 large onion (white, yellow, purple, or sweet)
  • 6 mozzarella cheese slices

For Frying

  • Vegetable oil (for deep frying, enough to fill medium pot)

Instructions

  1. Prepare Potatoes: Peel the potatoes and slice them into ½ inch thick pieces. Steam the potato slices over medium-high heat for 30 minutes until tender. Mash the steamed potatoes until smooth.
  2. Make Potato Dough: Measure 750g of mashed potatoes and add 5 tablespoons of glutinous rice flour. Mix well to combine. Gradually add 1 teaspoon of salt and ½ teaspoon of black pepper to taste, mixing thoroughly and adjusting seasoning gradually.
  3. Prepare Onion Rings and Cheese: Slice a large onion into ½ inch wide rings. Cut mozzarella cheese slices into strips matching the width of the onion rings. Insert smaller onion rings inside larger ones, placing mozzarella strips between to fill the space between the rings.
  4. Assemble Donuts: Roll portions of the mashed potato dough into log shapes. Place each log over an onion ring layered with cheese, and cover the onion and cheese completely with the mashed potato dough, shaping it into a donut form. Repeat for all onion rings.
  5. Deep Fry: Heat vegetable oil in a medium pot to 350°F (175°C). Gently lower each prepared potato donut into the hot oil using a slotted spoon. Deep fry over medium-high heat for about 5 minutes until golden brown and crispy. Remove and drain on a cooling rack.
  6. Serve: Let the fried cheesy potato donuts cool for about 5 minutes before serving. Enjoy hot, optionally with your favorite dipping sauce.
