Ingredients

Cooking spray

1 (12 oz.) pkg. Hawaiian sweet rolls (such as King’s Hawaiian)

1/2 cup mayonnaise

1 tsp. apple cider vinegar

1/2 tsp. dry mustard

1/2 tsp. kosher salt

1/2 tsp. black pepper

2 cups shredded cooked chicken breast

1 cup shredded Cheddar cheese

2 tsp. hot sauce (e.g., sriracha or cholula)

12 slices pepper Jack cheese

1 cup sliced dill pickles

3 Tbsp. butter, melted

2 tsp. Dijon mustard

1 tsp. Worcestershire sauce

Instructions

  1. Preheat oven to 350°F and coat a 13×9-inch baking dish with cooking spray.
  2. Without separating the rolls, slice them in half horizontally to create a top and bottom layer. Place the bottom half in the baking dish.
  3. In a medium bowl, whisk together mayonnaise, vinegar, dry mustard, salt, and pepper. Fold in shredded chicken, shredded cheddar cheese, and hot sauce.
  4. Layer half of the pepper Jack cheese slices on the bottom half of the rolls.
  5. Spread the chicken mixture evenly over the cheese, then add the pickle slices.
  6. Top with the remaining pepper Jack cheese slices.
  7. Place the top half of the rolls over the filling.
  8. In a small bowl, stir together melted butter, Dijon mustard, and Worcestershire sauce. Drizzle evenly over the rolls.
  9. Cover with foil and bake for 20–25 minutes, until the cheese is melted and the buns are lightly crisped. Serve hot.

  • Use rotisserie chicken for a time-saving shortcut.
  • Customize cheeses to your preference — Swiss or Colby Jack work well.
  • Dill pickles add zing, but bread-and-butter or spicy pickles are also great.
