Instructions

  1. Prepare the bruschetta mixture: In a bowl, combine chopped tomatoes, minced garlic, chiffonade basil, 1 tablespoon balsamic reduction, and 1 tablespoon olive oil. Season the mixture with salt and pepper to taste and let it marinate at room temperature while preparing the other ingredients.
  2. Cook the chicken: Heat 2 tablespoons olive oil in a large skillet over medium heat. Season the cubed chicken breasts with salt and pepper, then add them in a single layer to the skillet. Cook until browned on one side, then flip and cook a few more minutes until fully cooked. Remove the chicken from heat, place in a bowl or plate, and cover with foil to keep warm.
  3. Toast the bread: Preheat the broiler. Lightly brush the cut sides of the bread loaves with the remaining 1 tablespoon olive oil.
