Instructions

  1. Heat the skillet: Heat a large skillet over medium-high heat until hot. Add the avocado oil or ghee and heat until shimmering to prepare for cooking.
  2. Sauté garlic: Add the minced garlic to the skillet and cook for about one minute until fragrant, stirring frequently to prevent burning.
  3. Cook sausage and vegetables: Add the sliced andouille sausage to the skillet and cook for 3 to 4 minutes, browning on both sides. Once browned, add the sliced bell peppers and yellow onion. Season everything with salt, pepper, and the Cajun seasoning. Cook the vegetables for 3 to 4 minutes until tender-crisp.
  4. Add shrimp: Add the shrimp to the skillet and toss everything together to combine well. Cook for 2 to 3 minutes until the shrimp turns translucent and is cooked through.
