Ingredients

Potatoes

  • 3 pounds Yukon gold potatoes (or red potatoes or new potatoes, cut into 3/4-inch cubes)

Dressing and Salad Mix-ins

  • 1 cup mayonnaise
  • 3 tablespoons whole grain mustard
  • 1 tablespoon Cajun seasoning (or more to taste)
  • 1/2 teaspoon kosher salt (optional)
  • 1/4 teaspoon freshly ground black pepper
  • 1 small green bell pepper (diced small)
  • 1 small white onion (diced small)
  • 3 ribs celery (diced)
  • 1/4 cup dill pickle relish
  • 1/4 cup finely chopped fresh flat-leaf parsley (plus more for garnish if desired)
  • 6 hard-boiled eggs (chopped)

Instructions

  1. Cook the Potatoes: Place cubed potatoes in a large pot or Dutch oven and cover with cold water by 1 inch. Bring to a boil uncovered over medium-high heat, then reduce to a simmer. Skim off any foam that forms and cook for 6 to 10 minutes until potatoes are just fork tender. Drain well in a colander and let cool for at least 5 minutes.
  2. Prepare the Dressing: In a large mixing bowl, whisk together the mayonnaise, whole grain mustard, Cajun seasoning, kosher salt (if using), and freshly ground black pepper until smooth and well combined.
  3. Mix the Salad: Stir the diced green bell pepper, white onion, celery, dill pickle relish, and chopped fresh parsley into the dressing. Add the cooled potatoes and chopped hard-boiled eggs, then gently toss everything until evenly combined without breaking up the potatoes.
  4. Chill and Serve: Cover the bowl and refrigerate the salad for at least 1 hour to allow flavors to meld. The salad can be kept refrigerated for up to 3 days. Before serving, garnish with additional fresh parsley if desired.
