These Buttery Cheese Garlic Rolls are ultra-soft, fluffy rolls filled with rich roasted garlic butter and gooey, melted mozzarella cheese. Perfect for parties, family dinners, or anytime you want a warm, savory treat.

Ingredients

1 garlic head

Sprinkle of salt

30g olive oil

50g butter

1 tbsp fresh parsley

90g warm milk

7g active dry yeast

25g honey

200g all-purpose flour

50g bread flour

20g milk powder (optional)

25g butter

2 egg yolks

1 1/2 tsp salt

1 tbsp sugar

200g mozzarella cheese

1 egg (for egg wash)

Instructions

  1. Roast garlic: Cut the top off a garlic head, drizzle with olive oil, sprinkle with salt, cover with foil and roast at 160°C (320°F) for 2 hours.
  2. Prepare garlic butter: Mix roasted garlic with butter, parsley, and 2 tbsp garlic oil. Set aside.
  3. Activate yeast: Combine warm milk, yeast, and honey. Let sit for 10 minutes until frothy.
  4. Make dough: In a bowl, mix flours, sugar, milk powder, butter, salt, egg yolks, and yeast mixture. Knead until smooth (15–20 mins).
  5. First proof: Let dough rise in a warm place (29°C/85°F) for 1.5 hours or until doubled.
  6. Roll out dough to 1/4 cm thickness. Spread garlic butter and sprinkle mozzarella cheese.
  7. Roll dough into a log and cut into 6 pieces using floss or a knife.
  8. Second proof: Place rolls on a baking tray and proof for another 30 mins.
  9. Bake at 175°C (350°F) for 20–25 mins. Check after 20 mins.
  10. Finish: Brush baked rolls with leftover garlic butter and top with chopped parsley.

Notes

  • Roast garlic a day ahead to save time.
  • You can swap mozzarella with cheddar, gouda, or parmesan.
  • If the dough feels dry, add more milk gradually.
  • Use dental floss for clean cuts.
  • Broil the rolls for 2–3 mins for a golden top.
